Easy Chia Pudding Recipe: Made without Dairy

In case you might have missed it my new little bundle of joy, Barrett, made his arrival at the end of January.

His arrival marked the start of a new breastfeeding journey!

As with Anghus, Barrett is showing some signs that his system does not like dairy. So I am once again navigating a diet without dairy…and a few other foods.

Life chasing a toddler and caring for an infant can be all-consuming. Breastfeeding hunger is also a VERY real problem that can strike at any time. Because of these things, I need to have nutritious and calorie-dense foods ready to go. They also need to be something I can share…Anghus wants everything I have!

Normally, cheese and yogurt are some of my go-to’s for quick snacks. I could easily pair each with some kind of fruit, giving me a delicious and satisfying snack. Cheese and sourdough crackers is easily my favorite snack.

Needless to say, when I realized dairy was off the table for a bit I began coming up with new foods that I could have.

Enter Dairy-free Chia Pudding!!

Health Benefits

Chia seeds are a great source of fiber, omega-3 fats, various nutrients, and are loaded with antioxidants.

If you enjoy chia seeds in the form of dairy-free chia pudding or in your smoothie you will get a good dose of calcium, magnesium, phosphorus, vitamin B1, and Vitamin B3.

Chia seeds are a decent source of plant-based protein as well.

You do not need to eat a large amount of chia seed to reap these benefits, just 2 tablespoons will do.

Ingredients for Dairy-free Chia Pudding

2/3 cup full-fat coconut milk
1 1/3 cup water
7 tablespoons chia seeds
1 teaspoon vanilla extract
2 tablespoon maple syrup
1/4 teaspoon cinnamon

Equipment Needed

The fact that no special tools are needed to make chia pudding might be the best part of this recipe! Here is what you need:

Measuring Cups and spoons

Medium side bowl

Mason Jars or other glass storage containers

How to make Chia Pudding

Add all ingredients to a medium bowl and whisk well to combine.

Allow mixture to sit for 5 minutes.

Stir once more to ensure there are no clumps.

If desired, divide into individual serving storage containers.

Cover and allow to chill for at least 2 hours or overnight for best results.

Top with your favorite fruit or granola and enjoy!

How to store

Chia pudding is great for meal prep! You can easily make a batch during your meal prep session and keep it on hand for the week.

I store my dairy-free Chia Pudding in mason jars in the frig. I typically make up two different sizes using 4-ounce and 8-ounce jars. By doing this, I have a serving size that fits my varying hunger and the smaller size is perfect for my toddler.
