Weekly eats for 1/15

It is Sunday so you know what that means…time to plan a menu and meal prep!

The chicken thighs with olive and tomato sauce that I tried last week was pretty yummy!  I really enjoyed the flavors.  But I am an olive fan so anything with them is fine by me, lol!  I did experiment with cooking it in the Instant Pot instead of the slower cooker and it worked well.  I cook it for 20 minutes and the chicken just fell off the bone.  It could have cooked a little less time to hit our meat preference so I will adjust it a little next time.  I wish I would have given this a try sooner!  It is going to be a nice Paleo-friendly recipe to add into the rotation.

Chicken Thighs with Olive & Tomato Sauce

The guy and I took a rest day yesterday since they were calling for bad weather here, we were lazy!!  And it felt great!!  I did not even cook, we had leftovers for lunch and for supper we snacked on sausage, cheese, veggies and dip and sipped some wine while bing watching Vikings.  Not full Paleo but so good for the soul!  And let’s be honest here, none of us are perfect eaters all the time and that is completely fine.  Sometimes it is more important to enjoy the moment and not have any regrets about it.   While I truly believe that food choices are important, there are other ways to nurture ourselves beyond food and those things are equally as important.

I had enough left overs last week that I ate those for supper one night and did not make meatloaf so I will be making that tonight.  So here is this week’s menu

Sunday – Meatloaf, smashed cauliflower and steamed carrots
Monday- roast pork loin, roasted broccoli & cauliflower, fried apples
Tuesday- hamburgers, not sure on veggie yet(will see what I find at the store)
Wednesday- Mustard-glazed Thighs, asparagus
Thursday- Scotch Eggs, braised cabbage and potatoes
Friday- Pork steak, roasted veggie medley

I could not seem to find anything else that appealed to me this morning so I will decide on next weekend’s meal later this week.
