Weekly Eats for 1/24/16

It’s that time of the week again, time to get out the cookbooks, take stock of what’s on hand and plan the menu! I was going to make nachos tonight but there was a bit of a change in the schedule so shifted those to tomorrow…hoping to find some good-looking ribs at the store to grill up tonight.

Sunday- Primal style nachos
Monday – Pulled pork, cole slaw, fried apples
Tuesday – Turkey Marbella with cauliflower rice
Wednesday – Chicken and veggie soup
Thursday – Left over soup
Friday – Italian stuffed peppers (from Practical Paleo by Diane Sanfilippo) and a salad
Saturday – Beef fajitas
Lunch – leftovers

I have been eyeing the Chicken Marbella recipe in Paleo Cooking from Elana’s Pantry for a bit now but have never made it. The ingredients include olives, capers and garlic, all so appealing!!! I have a turkey breast in the freezer so figured why not use that instead of chicken.

This weekend’s prep work includes making BBQ sauce, mayo, slaw dressing, bread and broth for the soup. I have some ripe bananas just waiting to be made into bread so hoping to squeeze that in too. Monday night I will get the turkey in the marinade. Everything else will be made the day of.

I am off to get some things done! Have a great weekend and week!
