Meal planning

Hello, my name is Julie and I am a meal planner!  I have been doing this for more years that I can recall and it works well for me.  I like having the menu planned for the week so I am not deciding each morning what to do for that evening.  No matter how earlier I get out of bed, I always end up rushing to get out the door.  Without a plan I inevitably forget to set meat out to thaw….causing extra stress in the evening or an extra trip to store.  Planning always allows me to get the grocery shopping done in one trip and keeps me more on budget.  Basically, it makes life easier!!  And I am all for that!

Here is the meal plan for the week of 1/17/16

Sunday – Beef stew with mashed cauliflower
Monday – Spaghetti with “zoodles”
Tuesday- Pad Thai – recipe from Well Fed but I tweak it to use the types of veggies on hand/preferred http://meljoulwan.com/2011/05/08/paleo-pad-thai/
Wednesday – Pork chops, roasted beets and steamed carrots
Thursday – Beef fajitas, guacamole (of course!!)
Friday – Meatloaf, wild rice and steamed veggies
Saturday – Nachos Primal style
Breakfast – Ground turkey, butternut squash and apple skillet
Lunch – leftovers or roast chicken and veggies

Like everyone else, I prefer to keep the weekday meals on the easy side. If I do want something that takes longer then I will do as much prep as I can ahead of time when I can sneak it in.  For example, over the weekend I will also do prep for the Pad Thai…roast the squash and chicken, and whip up the sauce.  On Thursday, I will quickly throw the beef in a marinade on my lunch break. Doing these little things helps get supper on the table a little quicker.  The rest of the menu will be made the day it is eaten.

So that’s my plan for this week and I must say I am looking forward to enjoying it all!
