Menu & baby adventures

Happy Monday! It is much later then I intended to be sharing this week’s menu with you. Heck, I have already eaten two of my planned meals! But Mr. Anghus has had other plans for me. He is so very active these days, which makes it difficult to multitask while he is awake! He has his army crawl down and he is quick! This week he has also started pulling himself up on whatever can! I always have to keep an eye on him to make sure he doesn’t really hurt himself…or the cat! Plus, I am certain he is starting to get really serious about cutting his first teeth. Which is exciting and nerve-racking all at the same time for this mom!

For the menu this week, I took a little time to flip through some cookbooks to see if anything new sparked my interest. One recipe did, the Southwestern tri-tip roast from Better Home & Garden. It has chipotle peppers and cumin in the rub, a couple of my favorite spices. The sweetness of my Mango Slaw should pair with it nicely! I am looking forward to this meal.

You will also see lots of potatoes on the menu. I know that having dense carbs on my plate makes me feel better and prevents me from being hungry again in an hour….ok, not really an hour, but sometimes within 2 hours! Between still getting up with Anghus multiply times a night and breastfeeding, my appetite is strong & carbs are serving me well. So I am going to shift back towards including more real food dense carbs, moving away from the rice and rice noodle pattern we have been in for the last 7 months or so. I do consider rice a good carb source but feel that is something that should be slightly limited in consumption…even though I am soaking it to reduce the phytates and making it easier to digest. I will not be cutting rice out completely since none of us have an issue with it and it works great with some meals like the Super Garlic Meatballs for The 21 Day Sugar Detox Daily guide.
