Weekly Eats for 2/1/16

Greetings!

Last week had an unexpected situation come up which turned life into chaos.  Thankfully I had done enough prep that we were able to eat home cooked meals.  I will be honest with you, we hit a fast food chain for a greasy burger (sans the bun for me) and milk shakes on Thursday.  It is not very often that those things are consumed around here, but in the moment it was a needed change of pace and in a way, it was comforting and I enjoyed it!

As a result of the crazy week, I am not as organized as usual for the upcoming week.  I am still trying to regroup and planning a menu just wasn’t happening when I sat down to work on it…I tried multiple times!  So I am kind of winging it this week.  I took a quick look at what is on hand and made a run to the store.  I picked up the basics…lettuce, beets, broccoli, zucchini, olives, bacon, coffee, onions, garlic, cherry tomatoes, avocados, pork chops, and some fruit.  I already had cauliflower, carrots and cabbage, as well as some protein in the freezer.  Also, I stewed a chicken last Sunday but never finished making into soup, I will do something with…just not sure what yet!!  These items should get us through most of the week.  If I have to make a quick run to the store later in the week, so be it.  Sometimes you just have to roll with it!!
