Weekly Eats

Hello, hello!

So the last couple of weeks I have just been sort of winging it in the meal prep area.  I am not sure why exactly, there has been lots happening and I have had no focus for building the meal plan.  Tonight’s supper is a prime example….starting out thinking I would sauté some chicken breast in garlic and butter with some Greek seasoning but halfway through cutting up the chicken I decided I was feeling on the Chinese side.  I wasn’t completely sure what I was going to do for the sauce, but I grabbed a few things I had on hand and went with it.  It turned out pretty darn good!

Here is the recipe –
Juice from 1 orange
1/3 cup coconut aminos
1 tbs. Penzey Bangkok seasoning
Fresh grated ginger to taste
5 drops fish sauce
salt to taste
1 tsp tapioca starch

Mix together, add to pan of meat and veggie, cook until thick.

I did not measure as I was making this so you may have to adjust the tapioca starch. I love ginger and I used a lot in this dish…I added it to the chicken while it was cooking and sauce! You can add as much or as little as you like. The sweet of the orange and slight spicy of the Bangkok seasoning worked very well together.  The recipe made enough to nicely coat 1 pound of chicken, 1 cup of borocilli and asparagus.  I will definitely making this again!  Besides being quick and easy after a night of working late and grocery shopping, it was yummy!

Friday – Pad Thai
Saturday – ??
Sunday – pork steak, kale and beets
Monday – Shepard’s Pie
Tuesday – Beef stew
Wednesday – Mustard glazed chicken thighs, steamed veggies
Thursday – Left overs

Saturday I am going to help my guy with some things and not sure how long the day will be so I just don’t know what we will do for supper that night. We might go out or eat leftovers or cook, who knows!! I made sure to buy some extra protein incase we do end up cooking that night.

Not much prep this week except for making sure I get meat out of the freezer.  I will try to get the Shepard’s pie and beef stew made the day before since they do have longer cook times.  And I think they both taste better the next day.
